A really cool video I’ve watched recently was How to Unzip Fish – basically a way to pull the skeletons right out of the fish to emphasize as much meat as possible.
You can learn how to fillet fish of all species – from saltwater to freshwater. I mostly use it on freshwater myself.
It’s not a very long how-to DVD on filleting, so you can pick it up pretty quick.
